Chili - the Southwest Comfort Food
Preparation:
Follow cooking directions on package.
Suggested side dishes:
- Corn bread
- Cooling 9-layer salad (serves 8 to 10)
- First layer: Cut iceberg lettuce into bottom third of a glass bowl about 12"x13"
- Second layer: 2 to 3 stalks chopped celery
- Third layer: 1 large green pepper, finely diced
- Fourth layer: 1 bunch green onions, thinly sliced
- Fifth layer: 1 10-oz package uncooked frozen peas (run water over peas to thaw)
- Sixth layer: 1 cup mayonnaise and 1 cup sour cream mixed together (spread evenly and seal to edge of bowl)
- Seventh layer: sprinkle 2 to 3 Tbsp sugar or 1 packet sugar substitute over top
- Eighth layer: sprinkle shredded Swiss or cheddar-jack cheese generously to cover
- Refrigerate overnight, or at least several hours
- Ninth layer: cook 10 to 12 strips of bacon (lower fat turkey bacon is fine) till crisp and crumble over top just before serving, or substitute diced ham for bacon
- Do not stir or toss the salad
